</p><p>Jean-Marc Bernelin, Technical advisor of Barry Callebaut is no stranger to our trade professionals in Asia since 2002.<br />
With a great passion in being a professional pastry chef, Jean-Marc knew that it was essential to attain an academic achievement in order to embark on this career. Therefore from 1992 to 1996, he took up professional pastry courses at Chamber of Commerce in Paris.</p>
<p>During this period, Jean-Marc worked as an apprentice with FERRANDI in different pastry shops in Paris. And he was selected as the best apprentice of France in 1994 and titled as the grand price winner of Arpagon competition in junior category.</p>
<p>Achieving the award had indeed allowed Jean-Marc to carve out from an apprentice to a professional pastry chef in<br />
different countries to organizations such as being a pastry cook in the Prime Minister office during his national service.</p>
<p>Jean-Marc’s career moved on to another level when he was the pastry chef of Hediard in Dubai, United Arabs Emirates from 1998 to 1999. His responsibilities were to overseeing the pastry- bakery department, opening of shops, creating all recipes to involvement in all restaurants promotions.</p>
<p>Jean-Marc continued his professional journey in Singapore from 1999 to 2001 as a Pastry and Bakery Chef in a French pastry shop. Besides assuming the above-mentioned responsibilities, Jean-Marc had different role to play; from purchasing of material, training, organizing catering services to ensuring customer satisfaction in the shop. He was even nominated as Inniskillin Pastry Chef of the Year at the World Gourmet Summit 2002 Award of Excellence.</p>
<p>With his vast experiences throughout the past 9 years as a pastry chef, it has greatly helped Jean-Marc tremendously when assuming his position as a International Technical Consultant. Jean-Marc’s main responsibilities are to conduct demonstration in trade exhibitions to new product launches, give new ideas and technical advise to our key customers in Asia.</p>
<p>Travelling more than 50 % of his time all around Asia, from Australia to China, From Japan to Korea including Taiwan, Malaysia, Philippines, Indonesia, Thailand, India and of course Singapore. The rest of his time, he is taking care of the chocolate academy in Malaysia and in China.</p>

</p><p>Jimmy Chok is one of the most dynamic and talented young chefs in today’s culinary scene.  Best known for his creation of innovative recipes that blend Asian ingredients with western-style cooking, Jimmy’s name is synonymous with “fusion” food.</p>
<p>A graduate of the Institute of Hotel Management in Kuala Lumpur, Malaysia Jimmy was introduced to French cooking when he undertook a 14-month stint at the Salzwaage Restaurant in Switzerland.   In 1994, he joined the Raffles Hotel in Singapore which set the road map for his exploration into the culinary world.  From the famous Bar and Billiards Room to the Raffles Grill, and then Doc Cheng’s, this is where he discovered his “passion for fusion.”  Looking to broaden his culinary skills even further, Jimmy chose to work in selected restaurants serving different cuisine &#8211; Fig Leaf Restaurant, Tung Lok Group of Restaurants, House of Mao, Club Chinois, Tower Club Singapore, Butterbean Bistro and Coriander Leaf.</p>
<p>With his knowledge of local Asian flavours and training in French cooking, it was only a matter of time before Jimmy embarked on his quest to bring the best of both worlds together, East and West, through his inimitable style of creating and serving up mouthwatering and “stylish” dishes.  In 2002, Jimmy became the proud owner of Salt, housed in the popular Amoy Street down by old Chinatown, noted for its unique brand of fusion cuisine.  After fronting Salt for three years, Jimmy decided to take a break from the business side of things, and currently works at The Academy Bistro as Executive Chef. Come August 2010, Jimmy will be embarking on a new challenge, he will open his new restaurant called Bistro Soori.</p>
<p>Not one to rest on his laurels, Jimmy is always on the lookout for opportunities to perfect his art. His constant need to “evolve” is a testament to his willingness to explore and create innovative dishes to cater to the ever-changing palate of today’s discerning customers.  To this end, Jimmy has, over the years, participated in numerous culinary competitions, winning several accolades in the process:</p>

<p>He also participates regularly in food promotions around the Southeast Asian region, as well as Taiwan and Sri Lanka.</p>
<p>As a respected chef, Jimmy has added another feather to his cap, that of judging.  He was recently invited to judge the New Asia Cuisine category held in conjunction with Food and Hotel Asia 2002 and 2004, as well as the Bocuse D’or Competition in Singapore in 2005.</p>
<p>Jimmy’s fusion cooking is featured in several cookbooks, including <em>Soy Signatures</em>, <em>Crosswords</em> and <em>Inspirations</em> (Bamboo Shoot recipes).  He was also Consultant Chef to two other cookbooks, namely the <em>Spa Style Asia Food</em> and <em>Hotels Ala Carte</em>.  The crowning glory is the recently published (Marshall Cavendish, publishers) <em>Simple Cuisine of A New Generation</em>, the first commercial cookbook for Jimmy. This book boasts a selection of<strong> </strong>60 recipes and incorporates both eastern and western cooking techniques and ingredients.</p>

</p><p>Singapore based Australian artist Katrina Read has long been known for her Prosperity Collection featuring Feng Shui elements and Koi fish. Each feature piece incorporates the fluid nature of water and plays with the eternal light sources to capture a very dimensional aspect in her work. The paintings appear to change in appearance between the transition from day to night. It is here the fish seem to come alive on the canvas and transport us into an other worldly experience beneath the water. Every movement of the fish tails seem to hold your gaze within it, enticing us to capture something new in the detail. The fish draw upon a very traditional Chinese style of water colour painting, yet have been placed within a contemporary environment creating an East/West fusion appearance for a modern collector, ensuring it suits any modern interior. Lucky numbers feature strongly with combinations of eight or nine fish swimming in formation, or larger multiples on the striking large scale pieces.</p>
<p>The artist and her work have been featured in several high end publications including Millionaire Asia, Wine &#038; Dine, and Prestige Magazine. She has exhibited for the World Presidents Association and the Junior World Presidents through the Australian Trade Commission in Canada, and participated in Exhibitions in Asia, Australia and New York with the Prosperity Collection. Katrina was also a finalist in the New South Wales Export Awards as well as an award recipient for Arts &#038; Entertainment and as an Asian Exporter. Her work hangs with private collectors, in Corporate spaces, banks and hotels internationally. She is much sought after as a consultant on major projects due to her diverse skill base as a former Creative Director in print media advertising, as well as her years in television media.</p>
<p>Due to the popularity of her work, Katrina has extended the Prosperity Collection into a range of luxury products. This only enhances further her reputation as a creator not only of quality, highly collectable fine art, but allows us to capture some of the emotion and feeling we enjoy so much in her work.</p>
